SPINACH & CHICKEN ENCHILADAS are always a favorite for dinner in our house. This recipe used to use corn tortillas, but we decided to sub out whole wheat, high fiber instead making more of a wet burrito, but we still refer to the orginal recipe as an enchilada. LOL.
